So easy to make. Take 8oz of salmon, crab, or tuna. Mix with a tablespoon of good Greek yogurt, one egg, fresh dill, and add grated Parmesan cheese. Mix together and form into patties. Cook on medium high heat and top with herb spread. Tzatziki is a staple in my home.
Poach eggs in boiling water. Toast your bread and top with smoked salmon, capers, and eggs and then sprinkle fresh dill.
Slice cucumber to desired thickness. Top with any of these spreads: cream cheese, chèvre, herbed spread. Also, top with smoked salmon, capers, and dill sprigs. Perfect bite size. Fresh, healthy, and crisp.
