These are easy and quick party favors for a nice weekend afternoon snack with friends.
So easy to make. Take 8oz of salmon, crab, or tuna. Mix with a tablespoon of good Greek yogurt, one egg, fresh dill, and add grated Parmesan cheese. Mix together and form into patties. Cook on medium high heat and top with herb spread. Tzatziki is a staple in my home.
Mussels, shrimp, and scallops. Green onion, garlic, Thai chili paste, coconut milk, lots of cilantro, and squeezed lime. Served with toasted garlic naan.
Slice cucumber to desired thickness. Top with any of these spreads: cream cheese, chèvre, herbed spread. Also, top with smoked salmon, capers, and dill sprigs. Perfect bite size. Fresh, healthy, and crisp.
A wonderful birthday luncheon for a dear friend. We prepared a spinach, mushroom, and feta salad along with a seafood medley. Yummy!
